Actually if you saw three ships sailing into Bethlehem that would be a big deal:

One must assume that the three ships in question are transport for the three kings of Orient. I suppose it just sounds better than "I saw three camels go trotting by."

That would make sense, but according to the lyrics:

"And what was in those ships all three,
On Christmas Day, on Christmas Day?
And what was in those ships all three,
On Christmas Day in the morning?

The Virgin Mary and Christ were there,
On Christmas Day, on Christmas Day;
The Virgin Mary and Christ were there,
On Christmas Day in the morning."

Obviously what happened is that Jesus came across the desert into Bethlehem by ship in the morning so he could later that evening be born in a Bethlehem manger.

In other words, the "I" of the song is some sort of prophetic visionary?
Yes, that would make sense. Especially since there were apparently so many of them around back then.
